Black Bull Turbo Yeast‘s temperature requirements when added to sugar solutions is key in speeding up fermentation. An optimal sugar solution temperature range should be between 25-33C; higher temperatures can cause yeast stress that ultimately kills them; high temperature production also produces more volatiles than expected, potentially altering the flavor profile of your final product.
As part of fermentation, it’s crucial that liquid temperature doesn’t fluctuate dramatically, which can be best achieved using a thermometer to monitor it. Ideally this would mean keeping to an ideal 25 C liquid temperature; however this may not always be possible in warmer countries; when this isn’t achievable mantle cooling should be utilized to bring down air temperatures below 27C.
If the liquid temperature exceeds 40 C during fermentation (typically towards its conclusion), this will kill off all yeast. Therefore it is extremely important to monitor liquid temperature throughout fermentation and ensure it doesn’t go beyond this threshold.
